Lo Conte - Pizza Flour (1000g)
Lo Conte selects and mixes Italian soft grains, also ground to stone, to give your recipe a traditional flavour and the rustic scent of freshly baked pizza, typical of the best pizzeria. It is an unrefined flour, less white because it still contains the vital germ of the wheat. The flavour is inevitably more intense, and the rustic aroma is an evident characteristic. Compared to other flours, it is less moist, can absorb 5% more water in the dough, keeps better and longer (24 months), does not need to be sifted and does not harbour unwanted moths. It naturally contains a higher quality of fibre and germ and therefore more mineral vitamins and beneficial nutrients than a classic white flour. It has a balanced strenght (W 260) and allows leavening with very little yeast!
